Meatloaf made cheesy | recipe

Meatloaf memories - have it with a side of veggies, or slice it thin into a sub / sandwich.

My first memory of my dad 'cooking' is when mum went out for rare night out, and he was in charge of heating up her pre-made meatloaf... he burnt it!


This cheesy turkey meatloaf is high protein, easy to make, and foolproof (provided you remember to take it out of the oven!) If you want to just have a classic meatloaf, then don't add the cheese!

Tip: the meatloaf could be made with turkey, beef or pork - or a mixture of two.

Ingredients

Serves | 4-5


  • 250g turkey mince (breast or thigh)

  • 0.5 onion - finely chopped

  • 1 tbsp Worcestershire sauce

  • 80ml ketchup

  • 2 tsp Italian herb mix (thyme, marjoram, oregano)

  • 1 tsp salt

  • 1 large egg

  • 100g breadcrumbs (I use Panko for everything)

  • 1 tbsp olive oil

  • A few twists of freshly ground black pepper

  • 80g grated cheese (I use EatLean low fat cheese)

  • A handful of spinach (optional)

Sauce:

  • 80ml ketchup

  • 50g brown sugar

  • 2 tsp mustard powder

  • A few shakes of Tabasco (optional)

Method

  1. Pre-heat the oven to 180C.

  2. In a pan, add the oil and sauté the onion for 5 minutes on a medium-low heat.

  3. In a large bowl, mix the turkey, onion, herb mix, salt, egg, breadcrumbs and pepper.

  4. On a baking sheet, spread the turkey mixture into a rectangle sort of shape, and flatten out the mince to about 2cm thick. Make sure you leave a gap on the end of the sheet.

  5. Scatter a cheese layer over the turkey mixture, leaving a 2cm border on the edges, and on top of that a layer of spinach (if using).

  6. Take the baking sheet and start rolling the mixture over itself (like you would a swiss roll), until it has made a nice roll. With your fingers, flatten down the seams (long line across the length, and the sides).

  7. Place the roll in an oven proof dish - this should sit quite snug, so make sure you use a dish that is the right size.

  8. Pop into the oven, and cook for about 40 minutes.

  9. In the meantime, in a small bowl, mix the glaze ingredients

  10. Remove the meatloaf from the oven, and cover the top with the glaze. Return to the oven for another 15 minutes.
